Chicken salad recipe made easy.

Chicken Salad

Ingredients:

2 C chicken, diced
1 C celery, diced
1 green pepper, cut into small pieces
French dressing
Lettuce
Mayonnaise
1 Pimiento (optional)

Mix the pepper and celery with the chicken.
Marinate with French dressing, just enough to coat. Chill for about 1/2 hour.
Drain French dressing from salad. Mix with mayonnaise.Garnish with pimiento strips.

French Dressng

3/4 tsp salt
1/4 tsp mustard
1/4 tsp pepper
3 T vinegar
1/4 tsp paprika
1/2 C oil

Mix all ingredients together.
Beat with a fork in a bowl or shake in a jar with a tight fitting lid.
Ingredients will mix better if you add an ice cube while shaking.

NOTE: My kids add raisins to this chicken salad. I don't.

Malaysian Carrot and Cucumber Salad

The thing that makes this carrot and cucumber salad recipe so delicious is the tasty peanut dressing.

Difficulty rating: Easy

Serves: 4 as an accompaniment

Ingredients:
2 carrots
4” piece of cucumber, cut into thin strips
½ red pepper, cut into strips
2 tbsp fresh coriander leaves

For the dressing:
3 tbsp crunchy peanut butter
1 tbsp dark soy sauce
1 tbsp boiling water
1 sml clove of garlic, crushed
A pinch of chili powder

Method:
Using a potato peeler, peel all of the carrots so that they resemble “ribbons”.
Cut the ribbons in half length ways so that you get slimmer strips.
Arrange the carrot on a plate alongside the cucumber, red pepper and coriander leaves.
To make the dressing, add the dressing ingredients into a bowl and mix together. Drizzle over the salad.
