Mexican Food - Chicken with Garlic and Sweet Peppers - an appealing recipe, pretty on the table, and flavorful

8 skinless boneless chicken thighs

2 tablespoons olive or sunflower oil

1 red and 1 yellow pepper, seeded and thinly sliced

2 fat cloves garlic, thinly sliced

1 jar Mexican or Enchilada Sauce

1/2 lb whole green beans, trimmed and halved

12 oz sour cream

2 spring/salad onions, chopped

Sea salt and freshly ground black pepper

Preparation:

Brown the chicken thighs in 1 tablespoon of the oil in a hot frying pan. Remove and set aside.

Then add the remaining oil to the pan, along with the peppers and garlic.

Heat until sizzling, then sauté gently for 5 minutes until softened, stirring occasionally.

Return the chicken to the pan and pour over the sauce of your choice. Season well, add about half a glass of water, bring to a boil, then cover and simmer very gently for 10 minutes ( or more, until chicken is tender).

Meanwhile, boil the beans for 3 minutes or so, then drain.

Add to the chicken and peppers, and continue cooking for another 5-10 minutes until the chicken is tender.

Spoon over the sour cream and scatter with the chopped onions to serve, alongside rice or pasta.
