June is strawberry season and here is a wonderful, thirst quenching punch.


Strawberries are soooo sweet


Strawberry - A good source of vitamin C, fiber, folic acid and potassium. They contain a number of antioxidant compounds that help you stay healthy in a variety of ways.
Sugar cookies make either strawberry recipe even better.


Punch

20oz can chunk pineapple in juice
48oz can pineapple juice
3 cups orange juice
1/2 cup fresh lemon juice
1 quart ginger ale
1 basket of berries
Mint sprigs (optional)

Pour pineapple and canned juice into square pan or ice cube trays and freeze.
Chill remaining ingredients.
In a large punch bowl, combine frozen pineapple chunks, friut juices and ginger ale.
Wash and remove stems from strawberries.
Cut berries in half and add to punch along with mint sprigs.

Makes 4 quarts.

Strawberries and cream

12oz.frozen chopped strawberries
1/4 cup granulated sugar
1/2 teaspoon orange extract
1 1/4 cups heavy cream


Blend the berries and sugar until just mixed. Add extract.

Whip the cream until stiff, then fold in the berry mixture. Fill parfait glasses and refrigerate until firm.
