Vinaigrette made with lemon juice and red currant jelly.
Lemon Vinaigrette Dressing
1/2 cup red wine vinegar
3 Tbl fresh lemon juice
1 Tbl Dijon mustard
1/4 cup red currant jelly
1 1/2 cups olive oil
freshly ground black pepper
Combine vinegar, lemon juice, mustard and jelly in a bowl using a whisk.
Slowly add olive oil, whisking constantly.
Season with salt and pepper to taste
This dressing is an absolute favorite in my home. Woe to the person who uses the last and doesn't make more!
makes about 2 1/2 cups

1 1/2 C mixed spring greens
2 c romaine, chopped
1 c fresh blueberries
1/3 c goat cheese, crumbled
1/4 c red onion, thinly sliced
1/3 c toasted pistachios, chopped
1/2 c lemon dressing, (above)
1/2 c mini croutons
Toss and enjoy!
